Tomatoes and Corn
Jul 10th, 2009 by Cathy Jo Nelson
Nothing says July in South Carolina like vine ripe tomatoes and freshly shucked corn from the garden!
Tomatoes spotted–a plan is hatched
The other day I went by my husband’s school to help do a little work, and we stayed until the end of the workday. As we left the office area, I noticed a bag of tomatoes laying on the counter in the main office. I asked who they belonged to, and the only person left said one of the secretaries had accidentally left them.
Thief!
Will it shock anyone to know I TOOK that bag of tomatoes home? That’s right! My husband said daily someone brings in an assortment from a relative’s garden, and anyone working can come in and get a bag filled with what they want. We had grilled out bacon cheeseburgers for supper, and those tomatoes went very well with dinner.
Confession time
Before anyone wants to report me, I did visit the next day, bringing in a lunch for my husband. I stopped by to confess my sin to the secretary and her office pals, and was promptly told they would be bringing more fresh veggies for my husband to bring home to me.
So many tomatoes
So I’m going to make some soup starters now that I have way too many tomatoes. But oh how I do love them ripened from the sunshine on my plate. I could and have eaten them with all three meals in one day.

Cathy, that brings back such wonderful memories of eating a giant slab of beefsteak tomato that would cover a slice of toast for breakfast on a summer morning. Yum! If you ever have a surplus of green tomatoes I have a wonderful pickle recipe.
Here you write about two foods very close to my heart as well. I live in Leamington, Ontario, the tomato capital of Canada, home of a large Heinz tomato plant. The processing of these tomatoes in the summer months carries with it all the goodness of stewed tomatoes for a host of delectable recipes.
Funny. We have a small garden – cherry tomatoes, cucumbers, peppers, blueberries, and a couple strawberry plants. So far, only the cucumbers and blueberries are producing. We also have a couple of pecan trees that produce a bowl full of nuts a year. Fresh produce always tastes so much better than store bought.
